7-Up Blueberry Lemon Biscuits with Lemon Glaze

A bright, bakery-style biscuit you can whip up at home!
There’s just something magical about a warm biscuit fresh out of the oven — fluffy, golden, and kissed with a little sweetness. These 7-Up Blueberry Lemon Biscuits bring all the comfort of a classic Southern biscuit with a sunny twist of lemon and juicy blueberries. They’re light, tender, and finished with a bright lemon glaze that makes them absolutely irresistible.

Ingredients
Biscuits
• 2 cups Bisquick
• ½ cup sour cream
• ¼ cup sugar
• 1 tablespoon lemon zest
• ½ cup 7-Up (just enough to make a soft dough)
• 1 cup fresh or frozen blueberries
1/4 cup (1/2 stick) melted butter - for the baking dish -cast iron skillet.
Lemon Glaze
• 1½ cups powdered sugar
• Zest of ½ lemon (optional)
• Juice of 1 lemon
Instructions
1. Make the Dough
Preheat your oven to 425°F a
In a mixing bowl, combine the Bisquick, sour cream, sugar, and lemon zest. Slowly pour in the 7-Up, stirring gently until a soft, slightly sticky dough forms. Fold in the blueberries with a light hand so they stay whole and pretty in the biscuits.
2. Shape the Biscuits
Turn your dough onto a surface dusted with Bisquick. Pat it out to about 1 inch thick. Use a biscuit cutter or just your hands — to shape your biscuits.
3. Bake
Melt butter in bottom of cast iron skillet. Place biscuits on top of melted butter and bake for 12–15 minutes, or until lightly golden on top.
4. Make the Lemon Glaze
While they bake, whisk together 1½ cups powdered sugar, lemon zest (if using), and the juice of one lemon. Adjust the consistency with a splash of water or more powdered sugar until it’s perfectly pourable.
5. Finish & Enjoy
Drizzle the warm biscuits with that bright, sweet lemon glaze. Serve warm and watch them disappear! This pairs perfectly with my Boozy Berry Jam.
Tips for the Best Biscuits
• Don’t overmix the dough. A gentle stir keeps your biscuits tender.
• Frozen blueberries work great. No thawing needed they help keep the dough cool.
• Double the glaze if you love a super-sweet finish (no judgment).
